Returning to Champagne Piper-Heidsieck today means encountering a Maison that has defined its expressive language with greater precision. The impression is unmistakable: more precision, more tension, greater rigor in the construction of the assemblage. It is a meticulous work on balance, where energy, salinity and the clarity of fruit come together in a coherent stylistic vision.
The construction of a perfect cuvée begins with the vins clairs, essential for understanding the direction of the Maison, and reaches its full expression in the art of assemblage as well as in the definition of the vintages, where precision and sensitivity ultimately shape the style.
Leading this evolution is Émilien Boutillat, today a central figure for both Champagne Piper-Heidsieck and Rare Champagne, the interpreter of an approach that begins in the vineyard and finds its full expression in the art of assemblage. The first Vintage signed by him is the 2018, a year that marks the beginning of a personal vision of the Maison’s style.
The tasting thus becomes an instrument within the style itself, capable of linking the identity of Champagne Piper-Heidsieck to its most selective expressions. Rare Champagne was historically created as the Maison’s cuvée de prestige and continues to represent its most rigorous dimension, produced only in vintages deemed exceptional and always in limited quantities.
Piper-Heidsieck
La Cuvée Brut, based on the 2021 harvest, with around three years on the lees, about 40% reserve wines and a dosage of 8 g/L, reveals almond, light bakery notes and a measured touch of boulangerie, followed by well-integrated tropical fruit. On the palate it is creamy and composed, with a discreet yet present salinity.
La Cuvée Brut Rosé, also based on 2021 and including wines from Les Riceys, with a dosage of 9 g/L, moves along a more contemporary line. Citrus, chinotto and a well-integrated floral component accompany an aromatic concentration centred on mandarin. On the palate it remains clean and taut, with a saline finish that connects it coherently to La Cuvée Brut.
Yet it is within the Essentiel range that the Maison defines its stylistic axis with greater precision.
Essentiel Extra Brut, an assemblage of 44% Pinot Noir, 34% Meunier and 22% Chardonnay, with 27% reserve wines, mise en cave in 2019, disgorged in September 2023 and with a dosage of 4 g/L, is one of the Maison’s most complete expressions. Around four years on the lees contribute depth to a wine that unfolds along a smoky, saline and vertical register, fresh and elegant. The structure is present, yet always controlled. Mineral finish, gourmet profile.
Essentiel Blanc de Noirs, based on the 2020 harvest, with 84% Pinot Noir and 16% Meunier, 28% reserve wines, mise en cave in 2021, disgorged in 2024 and with a dosage of 5 g/L, introduces a more vinous dimension. There is fruit, there is salt, and there is a fresh drive that prevents any excessive weight. The finish extends with precision and restraint, making it a Blanc de Noirs defined more by precision than by breadth.
Essentiel Blanc de Blancs, 100% Chardonnay, Extra Brut, with 30% reserve wines, mise en cave in 2018, disgorged in May 2023 and with a dosage of 4.8 g/L, expresses smoky notes, citrus and a toasted nuance that enriches the profile. On the palate the salinity is clear, with a precise progression and a slender yet textured structure. It is a Chardonnay of sharp definition, where the maturity of ageing does not erase the tension but renders it more complex.
The Vintage 2018, the first vintage signed by Émilien Boutillat, confirms the ability to combine fullness with control. The cuvée draws largely from Grands and Premiers Crus and is composed of 50% Chardonnay, 47% Pinot Noir and 3% Meunier. On the nose emerge pineapple, cream and a nuance of chocolate, with a broad yet always tense structure. On the palate it is full, fresh and saline, never excessive. In magnum it gains drive, elegance and greater aromatic definition, with balsamic accents and a subtle peppery note.
Rare Champagne
The final transition towards Rare Champagne reveals, almost in filigree, the continuity between the two Houses. Rare is not simply a higher-tier expression, but rather a different conception of time, selection and the construction of the vintage.
Rare Millésime 2012 stands out for stature and precision. The assemblage is built on an important Chardonnay component, particularly from Villers-Marmery, supported by a decisive contribution from Pinot Noir. The aromatic texture combines tropical, floral, spicy and mineral notes into a coherent whole. Flint, citrus, pineapple, passion fruit and dried fruit appear in succession. On the palate the wine is chalky, mineral and saline, unfolding broadly and continuously, supported by deep energy. The comparison with 2002 can be sensed in the same tension and ageing potential.
Rare Rosé 2014, tasted in magnum, expresses a dynamic and articulated personality. The colour is bright orange-coral. Citrus, orange, a delicate chinotto note and an elegant floral component emerge. On the palate it is saline, mineral and precise, with progressive development and a slightly spicy, subtly peppery finish that reinforces its tension.
The most striking element is the coherence of the journey. Champagne Piper-Heidsieck is now working with increasing precision on the construction of its style, while Rare Champagne represents its slower, more selective and layered expression.
The signature of Émilien Boutillat can be recognised in his ability to use assemblage as a form of writing. The Essentiel range defines the centre of gravity of the portfolio, the Vintage 2018 demonstrates how richness can be governed, while the vintages tasted show how time, when properly directed, can define a wine with even greater precision.
