The essence of the terroir in a new interpretation of excellence Maison Lallier, a historic estate in Aÿ at the heart of Champagne, opens a new chapter in the Réflexions collection with the launch of R.021 Brut and, for the first time, R.021 Brut Rosé. Both cuvées originate from the 2021 harvest and authentically embody the richness of the terroir and the Maison’s contemporary vision. Following its acquisition by the Campari Group in 2020 and the arrival of Dominique Demarville as Chef de Cave and General Manager, Lallier has embarked on an ambitious path of renewal, investing in quality, oenological precision, and a new production infrastructure.
Next to the original site in Oger, a new state-of-the-art winery has been built, now housing the fermentation area, the wooden ageing cellar with barriques and 25- and 50-hl foudres (Tonnellerie de Champagne, Taransaud, Rousseau), a dedicated winery for reserve wines, and a storage area. Three sandstone eggs have been introduced for the ageing of the red wine used in the rosé cuvée.
The Maison owns 20 hectares of vineyards, located across Aÿ, Oger, Cuis, Bergères-lès-Vertus, Grauves, Verzy, Verzenay, and the Côte des Bar, supplemented by about 150 hectares under contract. Vineyard work has been central to the new direction. “Réflexion represents our most authentic interpretation of each vintage’s character,” says Dominique Demarville. “In 2021, despite a complicated start to the season, nature surprised us with an extraordinary finish. The return of the sun gave the grapes a freshness and finesse that we were able to capture with precision in our blends.”
The Maison’s philosophy is rooted in the enhancement of Grand Cru and Premier Cru grapes, a balance between tradition and innovation, and an obsessive attention to blending. Lallier’s savoir-faire is exemplified in the Réflexions collection, alongside the prestigious Ouvrage. With R.021 Brut and R.021 Brut Rosé, the Maison presents two complementary expressions of its style, marked by freshness, purity, depth, and intensity. For the first time, these cuvées were entirely conceived by Dominique Demarville, from vineyard to bottle, and mark the beginning of a new oenological era. In R.021 Brut Rosé, the Grand Rosé changes its name to R. Rosé and, for the first time, includes Meunier in the Réflexions range, with grapes from the Vallée de la Marne (Verneuil, Romery) and the Montagne de Reims (Villedommange, Sacy). Completing the renewal, all cuvées will benefit from a new bottle with a more elongated neck and a refreshed visual identity, a tangible sign of the evolution underway.
Réflexion R.021 Brut
It is composed of 49% Pinot Noir, 44% Chardonnay, and 7% Meunier, with 70% wines from the 2021 harvest and 30% reserve wines. Vinification takes place in stainless steel at controlled temperature, with partial malolactic fermentation, and 8% of the blend is aged in barriques on fine lees. After approximately 26 months of ageing on the lees, disgorgement took place in July 2024 with a dosage of 7 g/l.
For the first time in the Réflexions collection, Meunier is part of the blend, adding a touch of fruitiness and roundness.
The olfactory profile is fresh and vibrant, opening on white flowers, jasmine, and white peach, with elegant citrus notes of lime and grapefruit, chalky nuances, and a hint of green apple. The bouquet evolves towards toasted and grilled notes, with delicate hints of pear tart and apple blossom. Accents of fresh almond, dried fruit, and a mouth-watering finish of tangy rhubarb candies follow. On the palate, the attack is round, with fine effervescence and perfect gustatory balance. Central acidity brings great liveliness, while citrus notes accompany a persistent, sapid, and mineral finish. The aftertaste reveals grilled and mentholated touches, giving depth and a fresh, harmonious sensation.
Réflexion R.021 Brut Rosé
The Grand Rosé changes its name and becomes R. Rosé. It features 53% Pinot Noir (including 7% from Bouzy vinified as red wine), 41% Chardonnay, and 6% Meunier, with 70% wines from the 2021 harvest and 30% reserve wines. Vinification takes place in stainless steel at controlled temperature, with partial malolactic fermentation, and 8% of the blend is aged in barriques on fine lees. After approximately 28 months of ageing, disgorgement took place in October 2024 with a dosage of 7 g/l.
A Champagne with a bright coral pink hue. On the olfactory side, it reveals enveloping fruity aromas of wild strawberries, red apple, and raspberry, with citrusy notes of orange and mandarin, and nuances of pink pepper, buttery brioche, and vanilla. The profile is enriched by fragrant and creamy sensations reminiscent of delicate pastry. On the palate, it shows vibrancy and complexity, with a fine structure and creamy texture that supports a chalky minerality and lovely freshness. The wine is broad and expressive, with good depth. The finish is saline, with a slight bitterness on the close, in line with the signature of the Maison.
